The traditional Sicilian bread experience is a spectacular acitivity designed to make you discover the taste of the Sicilian bread made with ancient grains. The ancient and rare practice of making the bread in the village of Santo Stefano Di Briga, located in the province of Messina.
Here, for almost five years, a local farmer- Nino Crupi – decided to continue an almost forgotten tradition: the cultivation of ancient Sicilian grains.
The reaping, trembling, and grinding of the grain will be explained to you in all detail and so the techniques of kneading the flour and baking the bread that will be freshly served to you accompanied by oil, vegetables and paté.
A full immersion in the history of this tiny village will be possible thanks to the guidance of Nino and your tour guide, which will lead you to visit the most important churches where surprising works of art and secrets are preserved.

Unveiling the secrets of the ancient Sicilian grains will be an extraordinary possibility to understand the importance of Sicily in Roman times when our island was known as the “Granary of Italy”. Today, this tradition is carried on by a few farmers, in certain parts of Sicily and Santo Stefano di Briga is one of them.
Bread cooking class and tasting: the types of Sicilian flour obtained with the ancient grains have a low level of gluten and a high level of protein, a feature that will make them highly digestive and light and the bread you will produce in this experience, will have the same characteristics. As an extra flavour, you will taste it with olive oil, vegetables and olive patè.
Walking guided tour: this experience will include also a visit to the village of Santo Stefano di Briga, walking between the narrow streets, meeting the locals and learning its history. Founded probably during the Arab domination of the island, the small town preserves today monuments of different ages.
Culinary experience: The original recipe of traditional Sicilian bread homemade with quality and ancient grains Sicilian flour, will be a great chance to learn about the importance of traditions in the kitchen. The quality of the ingredients is the result of the soils and techniques of cultivation that Nino studied and improved always in respect of the ancient habits.
History and traditions: Visiting the centre of the city you will be walking around the narrow streets, appreciating monuments of historical importance that have been part of the past and that today are a living proof of it, able to share their witness through the works of art that they preserve. During the walk you will learn also about particular traditions and stories that are hold in Santo Stefano di Briga each year.
Start the day departing from our meeting location, which we will establish together based on your request. As soon as you will arrive in Santo Stefano di Briga you will encounter Nino, who will accompany you to his small farm where he will explain the story behind the cultivation of the ancient grains that are sown on soils that were neglected for many years. These soils, which with his passion, commitment and care he began to use again, are the ones where today he produces all his products.
Once he leads you to his small factory, he will provide you with all the fresh and local ingredients so you can start preparing the dough for your Sicilian bread that will be left in leaving for 2 hours.
While we wait for our bread to rise, you will be guided around the historical center of the village, where you will discover surprising stories and small hidden symbols like the ones concealed inside the portal of the church of Saint Gaetano.
In the end, you will return to the small farm to bake the bread that you will taste together with the oil, vegetables and homemade patè and a good glass of wine.
